BLUEBERRY PROTEIN BREAKFAST MUFFINS

114 calories 

13g carbohydrates

10g protein

2g fat

 

 

INGREDIENTS:

 

1 cup of porridge oats

2 scoops of blueberry vegan protein powder

1 tsp. of baking powder

1 tsp. of maple syrup or honey 

1 large egg or 1/4 cup of aquafaba (egg replacement)

50ml of almond milk

100g of Alpo plain yogurt or alternative

85g of fresh blueberries

METHOD:

 

  1. Preheat the oven to 190 degrees / gas mark 5 and line 6 holes of a muffin tray with cases.

  2. In a blender cup, add the porridge oats and blitz to create a flour like consistency.

  3. Add the oats flour to a bowl along with the blueberry flavoured protein powder or your protein powder of choice along with the baking powder and mix well. 

  4. Next, add the sweetener, egg or egg replacement, almond milk and plain yogurt to a mixing bowl and whisk well ensuring all contents combine to make a slightly loose batter.

  5. Carefully fold in the fresh blueberries before spooning the batter into the muffin cases and baking in the oven for 15 minutes.
