BURRITO BOWLS

BREAKDOWN:

 

Serves 3

INGREDIENTS:

 

1 tbsp. of olive oil

400g / 1 can of black beans

325g / 1 can of sweet corn

2 tsp. of cayenne pepper

1/2 tsp. of cumin

1 onion, diced

2 tbsp. of water

200g of Basmati rice 

15g of fresh coriander, chopped

1/2 lime, juiced

2 fresh tomatoes

1 red pepper

1 red chilli

4 spring onions, sliced

1 tsp. of salt

1/2 tsp. of pepper

200g of romaine lettuce 

1 medium avocado, sliced

 

 

 

METHOD:

 

  1. In a hot frying pan with the oil, add the drained canned black beans and corn along with the cayenne pepper, cumin, diced onion and water and cook for 5-8 minutes.

  2. Next prepare the rice by cooking it in a pan of boiling water as per the packet instructions and then tossing it with the freshly chopped coriander and lime juice.

  3. Prepare the salsa by dicing the fresh tomatoes, red pepper and chilli and adding to a mixing bowl with the sliced spring onions.

  4. Toss the salsa mix with the salt and pepper and season further to preference.  

  5. Assemble your bowls so that each has spiced black beans and corn, lime rice, salsa, romaine and sliced avocado along the sides and serve with an optional dollop of fresh humous. 

  6. Enjoy immediately!
