CHOCOLATE ORANGE BREAKFAST BARS

INGREDIENTS:

 

1/2 Orange

1 tsp. of brown sugar

4 tbsp. of coconut oil

120g of peanut butter

5 tbsp. of honey or syrup

150g of oats

2 scoops & 1/4 scoop of chocolate orange protein powder

60ml of almond milk

100g of dark chocolate

METHOD:

 

  1. Preheat the oven to 180 degrees / gas mark 4 before slicing the orange into segments and sprinkling over with the brown sugar.

  2. Place the sugared orange onto a baking tray and bake in the oven for 16 minutes.

  3. In a large saucepan on low heat, melt the peanut butter with the honey or sweetener.

  4. In a mixing bowl, add the oats and 2 scoops of protein powder and combine before adding in the almond milk and melted peanut butter and syrup and combining with your hands to form a dough.

  5. Line a 2lb loaf tin and place the dough into the tin, using your hands to ensure it is thoroughly compacted and then place in the oven to bake for 25 minutes.

  6. Next, prepare the chocolate ganache by melting the dark chocolate in a heatproof bowl in the microwave in short bursts and combine with 1/4 scoop of the protein powder. 

  7. Pour the ganache over the cooked and cooled breakfast bars and place the orange segments on top before chilling for a minimum of 10 minutes in the freezer.

  8. Slice, serve and enjoy!
