225g smoked tofu

2 tsp. of vegetable oil

150g of silken tofu

2-3 stalks of fresh coriander

2 tsp. of madras curry powder

1/2 tsp. of garam masala 

1 lime, zested & juiced

1/2 tsp. of salt

1/4 tsp. of pepper

30g of raisins

1 medium carrot, grated

1/2 red onion, sliced

2 tbsp. of mango chutney

2 baby gem lettuces


1. Remove the tofu from its packaging before cubing and placing out on clean linen cloth and to drain off excess fluid for 15 minutes.

2. Add the tofu to a non-stick frying pan on medium heat with the vegetable oil, tossing as it cooks for 5-8 minutes.

3. Remove the tofu and place on some kitchen paper whilst you prepare the salad.

4. In a blender cup, blitz the silken tofu, fresh coriander, curry powder, garam masala, lime juice, salt and pepper for 2-3 minutes until thoroughly combined and smooth. 

5. Toss the coriander dressing in a bowl with the raisins, carrot and red onion and mango chutney.

6. Divide the baby gem between two bowls, fold the tofu through the dressing and pile on top before serving with an optional sprig of coriander.
