PEANUT BUTTER COOKIES

INGREDIENTS:

1 large banana

120g smooth peanut butter

170g of plain flour

1 tbsp. of baking powder

60g of soft dark brown sugar

100g caster sugar 

1 tsp. of vanilla extract

50-60g of vegan chocolate chips

METHOD:


1. Preheat the oven to 190 degrees / gas mark 5.

2. In a large bowl, mash the banana before thoroughly combining with the smooth peanut butter.

3. In a separate bowl, combine the flour and baking powder before stirring in the dark brown sugar, caster sugar and vanilla extract. 

4. Whisk in the mashed banana and peanut butter to form a soft dough before folding in the vegan chocolate chips. 

5. Use both hands to evenly distribute the cookie dough into 12-16 discs and place 5cm apart on a greased baking tray.

6. Place your cookies in the oven to bake for 10-12 minutes until the edges are golden brown.

7. Remove to a wire rack to cool for at least 5 minutes before serving.
