PEANUT BUTTER RICE KRISPIE TREATS

Makes 12

22g carbohydrates
5g protein
7g fats


INGREDIENTS:

4 cups of Rice Krispies

2 scoops of vegan protein

2 bananas (1 if using syrup)

120ml of syrup sweetener (honey or maple syrup optional)

200g of vegan chocolate 

METHOD:

 

1. In a large mixing bowl, add the Rice Krispies and protein powder and mix well.

2. Next, Mash the banana and add in the optional sweetener. 

3. Combine the wet and dry ingredients with your hands until the mixture becomes fully mixed and quite sticky. This can usually take about 2-3 minutes.

4. Using your hands create 8 large rounds with the mixture or 12 smaller rounds making sure to thoroughly compact the mixture so that the crispy treat doesn't become flaky when eaten.

5. Place the Krispie rounds in the fridge for a minimum of 1 hour to chill and firm. 

6. In a heat proof bowl, slowly melt the dark chocolate in short bursts in the microwave for 20-30 seconds before setting aside to cool slightly for 3-5 minutes

7. Remove the Krispie treats from the fridge before dipping them and thoroughly coating them in the vegan chocolate and place them back into the fridge for at least 60 minutes before serving!
