POPCORN CAULIFLOWER BITES

INGREDIENTS:

 

1 Medium sized cauliflower head

4-6 slices of bread 

360ml of soda water

200g of plain flour 

2 tbsp. of nutritional yeast

2 tbsp. of paprika

1 tsp. of salt

1 tsp. of pepper

1 tbsp. of coriander

METHOD:


1. Preheat the oven to 220 degrees / gas mark 7 and line a flat baking tray with parchment paper. 

2. In a bowl, separate the cauliflower into small heads/branches. 

3. In a blender cup, blitz the slices of bread to a crumb for 30-40 seconds.

4. Gently combine the soda water and plain flour in an additional bowl.

5. Add the bread crumbs to a bowl along with the yeast, paprika, salt, pepper and coriander and combine.

6. Dip the cauliflower branches in the soda and flour mix before thoroughly coating in the spiced crumb and laying out on the baking tray, being sure not to overlap the popcorn cauliflower bites. 

7. Place the cauliflower bites in the oven to baked for 10-12 minutes, checking occasionally to ensure the crumb does not burn. 

8. Enjoy immediately with your dip of choice! I love these bites with sweet chilli sauce!
