POTATO & LENTIL DHAL

INGREDIENTS:
4 medium sized potatoes
960ml of boiling water
190g of red lentils
1 tsp. of turmeric
1 large pinch of salt
1 tsp. of cumin
1 tsp. of coriander
1 tbsp. of medium curry powder
1 tsp. of garam masala
2 cloves of garlic, minced
10g freshly chopped coriander
2 green chillies, finely diced (optional)
METHOD:
1. Slice the potatoes into small cubes before adding to a saucepan with the boiling water on high heat and bring to the boil before reducing to a simmer.
2. Add the red lentils to the simmering potatoes along with the turmeric, salt, cumin, medium curry powder, garam masala and garlic and cover with a lid to simmer for 40 minutes and until the lentils have softened and the fluids absorbed.
3. Add in the freshly chopped coriander and optional chillies and cook for an additional 2-3 minutes before serving over a bed of rice or on its own as a hearty dish!
