PROTEIN BOUNTY BARS

INGREDIENTS:

 

60g of desiccated coconut

3 tbsp. of almond flour

2 scoops / 70g and 2 tbsp. of coconut protein powder or vanilla alternative

30ml of honey or agave syrup

30ml of chocolate almond milk or milk alternative

1 tsp. of vanilla extract

50g & 1 tbsp. of coconut oil

60g of milk chocolate alternative

METHOD:

 

  1. In a mixing bowl, combine the desiccated coconut, almond flour and 2 scoops of the protein powder.

  2. Add your sweetener of choice along with the milk alternative and vanilla extract and combine once more.

  3. Next, melt 100g of the coconut oil in a heatproof bowl in the microwave in short bursts before adding it into the previous mix and combining to a form a slightly sticky dough.

  4. Using your hands, evenly roll out the mix into 6 large bars that resemble the shape of a bounty bar. 

  5. Place the bars in the freezer to chill for at least 40 minutes.

  6. Next, prepare the chocolate coating by adding 1 tsp. of the coconut oil to a heatproof bowl with the milk chocolate alternative and melting in the microwave in short bursts of 20-30 seconds at a time.

  7. Once melted, mix with 2 tbsps. of the coconut protein powder.

  8. Using a fork, dunk the chilled coconut bars into the chocolate before laying out onto parchment paper and sprinkling with some extra desiccated coconut, leaving to set for at least 60-120 minutes. Alternatively, place the bars in the fridge to chill quicker!
