PROTEIN PANCAKES

BREAKDOWN:

 

Serves 2

526 calories

66g carbohydrates

23g protein

15g fat

 

INGREDIENTS:

 

4 tbsp. aqua faba / or 1 medium egg

90g of oats 

1 medium banana

1 scoop of protein powder

180ml of almond milk or milk alternative

1 tbsp. vegan margarine

30g of mixed berries

1 tbsp. maple syrup

 

METHOD:

 

  1. In a blender cup, add the egg, oats, half the banana, protein powder and milk alternative. 

  2. Blend for 60-90 seconds until thoroughly incorporated.

  3. Add a small amount of vegan margarine to a non stick pan and place on low to medium heat for 2 minutes.

  4. Add 1/3 of the batter mix to the pan and fry on medium heat for 2-3 minutes until the edges have browned.

  5. Using a spatula, gently flip the pancake and brown the other side for a further 2-3 minutes.

  6. Repeat this process with your remaining mixture.

  7. Assemble the pancakes and add the remaining banana and the mixed berries to the top of your stack before serving with a drizzle of maple syrup.
