INGREDIENTS:
1 small sweet potato
1 onion
1 small courgette
120g of plain flour
1 medium egg / 4 tbsp. of aquafaba
1 tsp. of chilli flakes
1 tsp. of red pepper seasoning
1 tbsp. of paprika
2 tsp. of salt
40g of vegan cheddar alternative
2 tbsp. of olive oil
60g of vegan mayonnaise
3-4 springs of fresh thyme
2 tbsp. of fresh lemon juice
METHOD:

Use a grater to chop up the sweet potato, onion and courgette. Then, Using your hands, squeeze out any moisture from the grated veggies before placing in a large mixing bowl.

Add in the flour, egg, spices, salt and cheddar alternative and mix well.

Use both hands to firmly create 9 thin patties from the fritters mix.

Place a frying pan with the oil on medium heat and ensure the oil is lightly sizzling before you introduce the fritters.

Cook the fritters for 3-5 minutes on each side until lightly golden with a crispy skin.

Make the lemon and thyme mayonnaise by combing the thyme, vegan mayo and lemon juice in a bowl.

Serve your fritters with a colourful salad and a generous helping of zesty mayo!
